This is made from a blend of heirloom dessert apples grown on a Biodynamic orchard on the lower slopes of Mt. Hood. All of the fruit was milled, macerated for 4 days and pressed in a vertical wooden press directly to barrel, where it was aged un-topped for between one to three years. We then added a small amount of freshly pressed, fermenting juice at bottling to create a completely natural, dry sparkling wine. It’s extremely long with fine textured bubbles from the wild secondary fermentation and very complicated notes of spice, herbs and salted citrus.
