Four friends in the 1970's formed a coop to focus and revitalize indigenous varietals nestled in their unique climate in the shadows of the Pyrenees. Forty years later, Plaimont produces wines from 5 AOC's using 9 varietals, many from pre-phylloxera plots. A release from their 'Boutique' label, Paparoc uses 60% Tannat and 40% Cabernet Sauvignon to produce a chillable red. Lots of cherry and blackberry on the palate with bright minerality common to area with well-integrated structure and tannin.
