Description
Half Cabernet Franc and the balance equal parts Chardonnay and Chenin Blanc. Sustainably farmed. Hand harvest. Very gentle pressing of whole bunches. Primary fermentation in stainless steel at about 18 C to retain freshness. Secondary fermentation in bottle with a minimum of 20 months on lees. Around 1g/l dosage to balance.
Mineral driven and dry with playfully notes of citrus and pear with the faintest whisper of white flowers.
