Description 

Joan Rubio is a leading protagonist in biodynamic viticulture in Spain. After 13yrs with famed Cava house Recaredo, Joan went back to his roots to pursue making wines from his family’s farm. Wines of inherent beauty, they convey the meticulous work done in the vineyard; alive and expressive, with energy, salinity and minerality. All the wines are macerated and obtained from free run juice, without pressing and slowly vinified.

Farmed organic and biodynamically. Hand harvested, 6-day maceration of the varieties and subsequent alcoholic fermentation with native yeasts in a 1000L amphora and one-part barrel for around 2 months.

Aromas of citrus and beeswax, offering a captivating interplay between terpene and rustic flavors. On the palate, it balances bright acidity with a textured mouthfeel, leading to a refreshing and lingering finish.
