Description
French for "Fat Sheep," this wine is made from vines from a single parcel with gneiss-based clay soil. The fruit is harvested a little later than the rest of Pepiere's grapes because this specific area gets more wind. More wind means slightly lower temps, so the grapes needs additional time to ripen.
The Melon de Bourgogne is aged on the lees for nine months before bottling. The wine is herbal and citrusy with a little bit of creamy texture (more almond milk than actual milk).
